Aam Ka Achaar

Aam ka achaar (mango pickles) is generally eaten with the regular meal and is enjoyed in the north Indian states. The ingredients required to make this achaar are raw green
mangoes, rock salt, fennel seeds, mustard seeds, onion seeds, fenugreek seeds, red chilli powder, turmeric powder and mustard oil.
To make the mango pickles, first sterilise and dry a glass pickling jar. Cut the raw mangos into pieces and put them in the jar. Cover them with salt and close the lid tightly. Leave the jar in the sun for 1 week. Mix all the other ingredients and add them to the mangos. Heat mustard oil and allow the oil to cool. Pour the oil over the jar and put in the sun for two weeks. Stir everyday to mix well.
